I sat down with Steve Simmons, Kitchen Manager/Chef at Nashville Spaghetti factory to discuss their gluten free menu. They have really expanded since I have last eaten there.
It took them three trys to find a g-free pasta that every one liked but they feel they have it now.
The company makes sure each restuarant has a designated area to prepare and cook their g-free meals. A flag will be on the food to let the server know this is a g-free meal and there won't be any confusion at your table.
He said to be watching, he has come up with a specail soup for lunch each day and it will be g-free as well. Steve said on any given Saturday night, he will have 2% of their guest ask for gluten free meals.
